7 Cakes that go very well with tea

Tea is in fashion again. In fact, after a period in which coffee consumption has gained a very significant expression, tea has returned to its prime and it seems that this trend not only came to stay, but everything indicates that it will grow even more because drinking tea has never been so fashionable as nowadays.

However, drinking tea does not necessarily have to be a "solitary" experience as you can perfectly accompany a cup of tea with a good and generous slice of cake. 

In fact, history tells us that cakes and tea have always complemented each other very well. Even members of the most notorious european courts did not give up a good slice of cake at tea time.

In this article we present some of the cakes that go very well with tea. They are quick and easy to prepare because they take few ingredients. However, despite their simplicity, they´re truly delicious, and can be consumed at any time of the day, cold or even still hot.

In Portugal, this is clearly one of the cakes of choice for all those who like to accompany a cup of their favorite tea with a delicious and textured slice of cake.
The good news is that this orange delight is really very easy to make so is within reach of the most amateur of cooks. 

In fact, this cake goes well with any type of tea so feel free to choose your favorite tea or infusion when enjoying a good slice of moist orange cake.


  • 4 eggs
  • 2 1/2 cups of white sugar
  • 2 cups of wheat flour with yeast
  • 3 1/2 teaspoons of baking powder
  • 2 units of orange juice
  • 1/2 orange zest

Orange syrup

  • 1 unit of orange juice
  • 3 tablespoons of white sugar


1. Add the egg yolks with the sugar in an electric mixer and mix until a creamy mixture is obtained

2. Stir the egg whites

3. Add the flour, yeast, orange zest and orange juice and finally the egg whites

4. Grease a cake pan with margarine and sprinkle it with flour and pour the dough

5. Bake in a preheated oven at 180º celsius for about 20 minutes

Syrup preparation

In a saucepan, bring the orange juice with the sugar to the heat until the sugar disappears completely.


Important: With a toothpick, make holes in the cake while it is still hot and drizzle with the syrup. This way it will accentuate the cake's orange flavor and moisture.

In fact, almond cake was one of the favorites of the portuguese royal court to accompany with a good cup of black tea.  

The best tea to accompany a good slice of this cake is clearly Broken Leaf black tea or black tea with bergamot  commonly known as Earl Gray.
If you prefer more exotic experiences then Hysson Green tea & Azorean Pineapple  & Ceylon Cinnamon is unquestionably the right choice.
Below we explain how you can prepare this delicious cake.

Number of servings: 4


  • 250 g of yellow sugar
  • 200 g of butter
  • 6 eggs
  • 150 g ground almonds
  • 200 g of flour
  • 1 teaspoon of baking powder
  • 4 tablespoons of milk

Butter, flour, 1 tablespoon of bitter almond


1. Turn on the oven at 180ºC

2. Grease a pan with butter and sprinkle it with flour

3. Mix the sugar well with the softened butter, add the egg yolks and stir some more and then add the almond

4. Add the flour with the yeast and the spoons of milk and bitter almonds

5. Stir the egg whites and wrap them in the preparation

6. Pour the batter into the pan and bake for about 40 minutes

7. Remove the cake and unmold it warm


Olive oil, honey and cinnamon cake

For those who like different things, the olive oil, honey and cinnamon cake is an awesome choice.
It's quite understandable that, due to its name and ingredients, most people's first reaction to this cake is of some strangeness. However, after tasting this exotic cake, they quickly surrender to its charms and it often becomes part of their list of favorite cakes.

To make the experience even more memorable and exotic, accompany this gastronomic wonder with a good green or black tea, hot or even cold (Ice tea).

  • 220 g of flour
  • 200 g of yellow sugar
  • 100 g of crushed nuts
  • 6 eggs
  • 1.2 dl of milk
  • 0.5 dl of olive oil
  • 4 tablespoons of honey
  • 1 table spoon of baking yeast
  • 1 teaspoon of cinnamon powder
  • Oil for greasing
  • Flour for sprinkling


1. Stir the eggs with the sugar, until a soft dough is obtained

2. Add the oil and milk, wrapping well. Sift the flour with the yeast and cinnamon, gently wrapping until well connected

3. Add the nuts and honey and wrap

4. Grease a pan with olive oil, sprinkle with flour and pour the dough

5. Place in a preheated oven at 180ºC for 35 minutes


Azorean Banana Cake

Do you like banana? If so, the banana cake from the Azores will surely be a very pleasant surprise. Unlike all other species, azorean banana, given its very own characteristics, gives the banana cake a unique flavor and texture.
In the Azores, especially in the islands of São Miguel and Terceira, the banana cake has long been part of the local cuisine. Its moist and full-bodied texture, its striking color and its sharp smell make this cake an obligatory presence, whether on party days or any other occasion.

If you want to be more daring, try to prepare this cake not with conventional azorean bananas but with silver-banana or apple-banana (also planted in the Azores) and get ready for a very different experience.
This cake goes very well with any type of tea or infusion. However, green tea & jasmine is clearly a good choice to accompany this pearl of popular Azorean cuisine.


  • 1/2 cup (tea) of milk
  • 1 tea cup of oil
  • 1 tea cup of sugar 
  • 3 eggs
  • 2 medium chopped bananas
  • 2 cups of wheat flour
  • 1 cup of MAIZENA® cornstarch
  • 1 tablespoon of baking powder

To grease:

  • 1 tablespoon of sugar
  • 1 teaspoon of ground cinnamon
  • 1 tablespoon of margarine


For dough:

1. Mix the milk, oil, sugar and eggs in a blender until everything is smooth and creamy

2. Add the bananas and stir until lightly crushed

3. Sift the wheat flour, MAIZENA® and yeast, transfer to a bowl and gradually add the mixture until you get a creamy, consistent and homogeneous dough

4. Place the dough in a round shape with a central hole (20 cm in diameter) greased and floured, sprinkle with sugar and cinnamon and bake in a preheated oven at medium temperature (180 ° C) for 40 minutes or until a toothpick comes out clean after being stuck in the dough.

5. Wait to warm and unmold the cake.


Nut Cake

This cake of smooth consistency and strong flavor is perhaps one of the most appreciated by true fans of the Azorean sweet gastronomy. 

Although it's a cake more oftenly consumed in the winter season, there are however those who find it irresistible all year round. In fact, homemade walnut cake is an irresistible dessert whatever the season, which is why it is one of the most popular cakes by the Azoreans, especially on the island of São Miguel and Faial.
For those who prefer green tea, then the most suitable tea to accompany the nut cake is unquestionably Encosta de Bruma, a tea produced exclusively from the terminal bud and the first leaf of the tea plant.
For those who prefer black tea, Orange Pekoe or Broken Leaf are both excellent choices to accompany this ex libris of Azorean desserts.


  • 6 eggs 
  • 300 g of flour
  • 200 g of sugar
  • 1 teaspoon of baking powder 
  • 140 g of chopped walnuts


1. Preheat the oven to 180º C

2. Place the eggs and flour in an electric mixer and mix lightly

3. Add sugar and yeast and continue to stir until the dough starts to bubble

4. Add the chopped nuts, reserving some to decorate the cake after it is cooked

5. Bake in oven 30 minutes at 180º C, in a round shape lined with parchment paper

6. Remove from oven, unmold and let cool

7. Decorate with the remaining nuts before serving

If there is a cake that normally appeals to everyone, it is clearly the caramel cake that, despite being more consumed in winter time, has been gaining loyal fans during the rest of the year.
Be honest; when you look up from a table full of desserts which cake often stands out? The caramel cake, right? Well then, this is one of the desserts whose appearance does full justice to its flavor, which is why the caramel cake is almost always the first to "disappear" from among all the desserts displayed on a table at a social or family event.
However, it is a moist and heavy cake which is why the most suitable tea to serve with caramel cake is Orange Pekoe black tea or Hysson green tea & Lemon Grass.



  • 260 g of butter
  • 280 g of sugar
  • 4 eggs
  • 1 egg yolk
  • 280 g of Super-Fine Snow White Flour
  • 2 tablespoons of  liquid caramel
  • Ointment  Spray


  • 1 can of condensed milk
  • 2 tablespoons of  liquid caramel
  • 1 teaspoon of oil


  • Walnut kernels


1. Grease with a grease spray and sprinkle with flour a 25 cm diameter dish. Reserve

2. For the dough, mix the butter with the sugar, until you no longer feel the granules

3. Add the eggs, one by one, and the egg yolk, stirring well between each addition. Add the flour and, finally, the caramel

4. Pour the dough into the pan and bake at 180 ° C for about 45 minutes

5. Remove after cooking, let cool well and unmold

6. With a serrated knife, trim the cake around and place it on a serving plate

7. For the topping, take the condensed milk with the caramel and the oil to the fire, always stirring with a wire stick, without lifting them from the bottom

8. Remove from heat and pour over the cake

9. Let cool and decorate with halves of the walnut kernels


São Miguel Pineapple cake

We could not finish this yummy article without mentioning a cake that is a true symbol of Azorean sweet gastronomy; The pineapple cake of São Miguel Island. Moist and consistent, this cake is absolutely delicious, which is why those who taste it immediately surrender to its charms. 

Very different from other species of pineapple, the azorean pineapple from the island of São Miguel gives this cake unique characteristics, making it one of the most appreciated cakes of the island´s gastronomic menu. 

The most suitable tea to join this exotic and tropical delight is without a doubt the Hysson green tea & pineapple from the Azores.


To line the form / base

  • 240gr of sugar
  • 4 + 3 tablespoons of water
  • Pineapple from the Azores (peeled and sliced or half-moons (without stem)

For the cake

  • 3 eggs
  • 230ml of Milk
  • 90gr of melted Margarine
  • 525gr of Wheat Flour
  • 335gr of Sugar
  • 1 tablespoon of baking powder


1. Start by making the caramel: Add the sugar and water and let it simmer on low heat, until it becomes caramelized

2. To make the liquid part of the dough, add - in a bowl - the three whole eggs and stir them

3. Add the milk and the melted butter

4. In another bowl, add wheat flour, sugar and mix well

5. Add the liquid prepared previously (in the first bowl) to the solid part (flour and sugar) and stir well

6. In a circular cooking shape, add the caramel previously made

7. Place the pineapple slices on the bottom of the pan, arrange in a way to fill the bottom

8. Put the dough in the pan and bake at 180ºC for 1 hour
